Walnut Meatballs w/
Apricot Barbecue Sauce
*Vegetarian
Sauce
¾ cup apricot preserves
½ cup apple cider vinegar or lemon juice
½ cup ketchup
¼ cup vegetable oil
2 tablespoons packed brown sugar
2 tablespoons grated onion
½ teaspoon salt
½ teaspoon finely chopped fresh oregano
Dash hot pepper sauce
Meatballs
4 cups cooked white or brown rice
4 eggs
11/4 cups soda cracker crumbs (about 36 crackers)
¾ cup finely shredded Colby cheese
¾ cup ground walnuts
1 small onion, finely chopped
2 garlic cloves, minced
3 tablespoons minced fresh parsley
11/2 teaspoons ground sage
½ teaspoon salt
1. Heat oven to 350F. Bring all sauce ingredients to a boil in medium saucepan. Cool.
2. Lightly spray 13x9 inch glass backing dish with cooking spray. Gently combine all veggie meatball ingredients by hand in a large bowl. Shape 24 (11/2-inch) meatballs; place in baking dish. Pour sauce over meatballs.
3. Bake 30 minutes or until meatballs are firm and sauce is bubbling all over and slightly thickened.
